Tomatoes, Tomatoes, Tomatoes! Do you have an abundance of tomatoes that you don’t know what to do with?
You must try my Roasted Tomato recipe. It’s one of my fav’s because it is sooo simple, flavorful, versatile, annnd not to mention healthy! You will find that this comforting appetizer brings your guests around the table, promoting conversation and great noshing. If you have any leftovers they can really jazz up your eggs, wrap, or pasta dish. The best part is you can put all those tomatoes to use!
Last weekend, I used the Roasted Tomatoes as a topping to baked mushrooms, stuffed with my Roasted Eggplant Hummus. I served this with a delicious Pinot Noir Pietra Santa from Pairings Wine and Food. It was a hit at our neighborhood block party.
For the football crowd, I created what I call Harvest Flatbread, made with my Sweet Potato Hummus, caramelized onions, goat cheese and crispy sage snipped from the garden.
The colors in this appetizer even looked like fall! Beer seemed like the the perfect complement. So, I saw this as the perfect opportunity to try Bards gluten free beer. I was curious, Gluten free Beer? Well, it was a very successful combination, and no beer bloating!
