Here is an example of a typical winter weekend day. You will see how easy it is to accomplish all of your new health resolutions and have a blast doing it!
To start your morning, try this new twist on oatmeal: Coconut Oatmeal.
I like to use dates to sweeten my oatmeal. You will never miss the brown sugar! The coconut milk is a nice non-dairy option. It will give you the “good” fat for abundant energy. Something you will definitely need as you are huffing up the mountain!
One of the things I love about winter is slipping in to the kitchen after spending time in the brisk snowy outdoors. While preparing my Gluten-Free Apple-Cinnamon Muffins, I listen to the George Winston station on Pandora and bask in the warmth of the oven. It is downright therapeutic!
To quickly get these muffins completed, before everyone came bounding in with boots and coats flying off, breaking the spell of my peaceful kitchen cocoon, I decided to shred the apple instead of chopping.
To my surprise, these were my best apple muffins ever! The shredded apple just melted into the muffin making it super moist and naturally sweet. They were the perfect complement to a cup of tea or hot cocoa made with dark-chocolate almond milk. Talk about a satisfying treat!
To celebrate the winter’s earthy vegetables, and get those greens in, I made Almond Chicken Soup with Sweet Potato. I didn’t have almond butter on hand, so I used some cashew butter instead. Talk about creamy and comforting! The squeeze of lime was a great fresh touch and not to be skipped, it totally makes the soup!
Now that dinner was competed, I could relax by the fire with my glass of Shiraz and relish in the memory of a great day. Hmm… who said living a healthy lifestyle was sooo difficult?
